Roasted Italian Potatos

Roasted Italian potatoes


5 yellow potato’s with skin on  cut into 16 pieces each

One median jar of Artichokes

2 cups pitted red olives with juice

2  cups pitted green olives with juice

1 cup red wine vinegar 

5 scallions cleaned and qurtered

Garlic powder about 2 tablespoons

See salt about 1 tablespoon


Mix all in large bowl and let sit for 8 hours

Pour off 3/4 of liquid 

Roast in oven uncovered for 1 /2 hours on 350

Stir occasionally
